The lump-versus-briquettes debate has been going on in backyard grilling circles for decades, and a lot of the information out there is either oversimplified or written by someone trying to sell you something. What briquettes are made of ¶
Standard charcoal briquettes are made from charcoal dust, which is a byproduct of charcoal production, compressed with a binder. The most common binder is cornstarch or sodium nitrate. Many briquettes also contain limestone, which makes them look white and ashy when they are ready to cook over. Some contain coal dust as a filler. None of these additives are dangerous in normal cooking use, but they do affect the smell and flavor of the fire, especially during the first 10 to 15 minutes of a cook.
Burn temperature and duration ¶
Lump charcoal, particularly dense earthen-kiln lump, burns hotter than briquettes. Temperatures at the grate level can reach 700 to 900 degrees Fahrenheit with a full chimney of good lump charcoal, compared to 500 to 700 degrees with briquettes. Briquettes, however, burn more consistently over time because their uniform shape and density produce a predictable fuel load. Lump charcoal requires more attention on a long cook because the irregular pieces burn at different rates.
Ash output and airflow ¶
This is where lump charcoal has a clear practical advantage. Briquettes produce a significant amount of ash, which can accumulate in the bottom of a kettle grill and restrict airflow through the lower vents, causing temperature to drop over a long cook. Dense lump charcoal produces a fraction of that ash. On a four-hour cook, the difference in ash accumulation is noticeable, and it affects how much you have to adjust vents to maintain temperature.
Flavor impact ¶
The flavor difference is real but easy to overstate. Clean lump charcoal does not impart a chemical taste to food the way briquettes can during the first few minutes of a cook. For a quick burger or a steak, the difference is subtle. For a long low-and-slow cook where the food is absorbing smoke and heat for hours, the cleaner fuel makes a more noticeable difference. When briquettes are actually the better choice ¶
Briquettes are not wrong. They are consistent, widely available, and easier to manage for beginners because the uniform shape makes fire management more predictable. If you are cooking for a large group and need to maintain a steady medium heat for two hours without much attention, briquettes are a reasonable tool. The case for lump charcoal is strongest when you want high heat for searing, when you are doing a long cook and want to minimize ash management, or when you care about the flavor of the fire itself.
